Kebabs are packed with good protein which can help speed up metabolism for weight loss and delicious veggies packed with fiber. Let’s get into this recipe!

Ingredients:

  • 1.5 lbs of boneless, skinless chicken breast, cut into 1-inch cubes

  • 1 red bell pepper, cut into chunks

  • 1 green bell pepper, cut into chunks

  • 1 red onion, cut into chunks

  • 8-10 wooden skewers, soaked in water for 30 minutes

Marinade:

  • 1/4 cup olive oil

  • 3 cloves of garlic, minced

  • 2 tablespoons lemon juice

  • 2 teaspoons smoked paprika

  • 1 teaspoon cumin

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon cayenne pepper (optional for some heat)

  • 2 tablespoons chopped fresh parsley

Instructions:
1. In a bowl, whisk together all the ingredients for the marinade until well combined.
2. Place the chicken cubes in a large resealable plastic bag or a bowl, and pour the marinade over the chicken. Make sure the chicken pieces are well coated. Marinate in the refrigerator for at least 2 hours, or preferably overnight for the best flavor.
3. Preheat your grill to medium-high heat.
4. Thread the marinated chicken, bell peppers, and red onion onto the soaked skewers, alternating between the chicken and vegetables.
5. Lightly oil the grill grate, then place the kebabs on the grill. Cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
6. Once done, transfer the kebabs to a serving platter and let them rest for a few minutes before serving. Garnish with additional chopped parsley if desired.
Tips:

  • If using wooden skewers, make sure to soak them in water for at least 30 minutes to prevent them from burning on the grill.

  • For an extra burst of flavor, you can add chunks of pineapple or cherry tomatoes to the kebabs.

  • Serve the chicken kebabs with a side of couscous, a fresh green salad, or grilled pita bread for a complete and satisfying meal.

These chicken kebabs are not only a treat for the taste buds but also a visually appealing addition to your table. With their vibrant colors and tantalizing aroma, they are sure to be a hit at any gathering. So fire up the grill, gather your loved ones, and get ready to enjoy these delicious, tender chicken kebabs!

What if you don’t have a grill? You can also make Kabobs using a stove! I would recommend cooking the chicken in a skillet first and then place the contents together and finishing cooking in the oven on the broil setting. It may not have the exact grill taste but it can still be delicious! It’s all about modifications and making things work best for you. What works best for others may not be the best option for all but that doesn’t mean it’s off limits to us. There’s a message in this somewhere! Enjoy the Kabobs.
