Mushroom Broccoli Frittata

There's something utterly satisfying about a well-made frittata. The combination of eggs, vegetables, and cheese creates a comforting dish that's perfect for any meal of the day. Ingredients:

  • 8 eggs

  • 1 cup broccoli florets

  • 1 cup sliced mushrooms

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup shredded cheese (such as cheddar or Gruyère)

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh herbs for garnish (optional)

Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the onions and cook until they become translucent, then add the mushrooms and broccoli. Sauté until the vegetables are tender, about 5-7 minutes.
3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, allowing the garlic to become fragrant.
4. In a separate bowl, whisk together the eggs, salt, and pepper. Pour this mixture over the sautéed vegetables in the skillet. Gently stir the mixture to distribute the vegetables evenly.
5. Cook the frittata on the stovetop for 3-4 minutes or until the edges start to set. Sprinkle the shredded cheese over the top.
6. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set in the middle and the cheese is melted and bubbly.
7. Once done, remove the skillet from the oven (remember to use oven mitts!). Let the frittata cool for a few minutes before slicing it into wedges. Garnish with fresh herbs if desired.
