Salmon Rice Bowl

Ingredients:

3⁄4 pound salmon

1 cup brown rice

1 tablespoon extra virgin olive oil

1 red onion diced

1 teaspoon chili powder

6 cups spinach

1⁄2 lemon juiced

1 pinch salt

1 pinch pepper

Instructions:

1 Cook brown rice according to package directions. Set aside and keep warm.

2 Preheat oven to 350°F.

3 Place salmon on a baking tray and bake for 10-12 minutes.

4 Heat olive oil in a medium skillet over medium heat. Add onion and chili powder and sauté until soft and the onion begins to brown.

5 Place the cooked salmon in a separate bowl and use a fork to flake.

6 Add the sautéed onion, flaked salmon, and spinach to pot of cooked rice. Toss to combine and spinach wilts. Season with salt and pepper.

7 Squeeze lemon on top and serve.
