Guacamole and Tortilla chips are one of my favorite snacks.  I used to by it from the store then one day in an effort to save money, I decided to make it on my own. Avocados have "good fats" meaning they are more heart healthy than fat that comes from animal sources.  They also contain folate essential for blood cell health and even Vitamin K for blood clotting during injury and bone health. This is a quick and easy to make and it's delicious.  ENJOY!

Makes 4-6 servings.

Ingredients:

  • 3-4 ripe Avocados

  • 1/3 medium red onion chopped

  • 1/2 can diced tomatoes (low sodium)

  • 1 Tablespoon (Tbsp.) Kosher salt

  • 2 teaspoons (tsp.) of lime juice

Directions:

  1. Open ripe Avocados remove center and mash thoroughly into large bowl

  2. Combine Avocado, chopped red onion, diced tomato and mix throughly

  3. Add kosher salt and lime juice to avocado mixture and mix thoroughly

  4. Enjoy with tortilla chips!
